1.) Pastry Chef
POSITION: Pastry Chef
DEPARTMENT: Kitchen
REPORTS TO: Executive Chef
LAST UPDATE: April 2025
PRIMARY OBJECTIVE OF POSITION
Pastry Chef to lead the preparation of a wide variety of desserts, pastries, and other baked goods. Passionate for baking, a flair for creativity, and a commitment to delivering high-quality confections that delight our guests.
TASKS, DUTIES AND RESPONSIBILITIES
KEY RESPONSIBILITY:
- Design and prepare a wide variety of pastries, cakes, cookies, and other desserts.
- Ensure all baked goods are completed on time and to the highest quality standards.
- Decorate pastries using different icings, toppings, and other elements to ensure the presentation is attractive.
- Develop new seasonal and custom recipes based on trends and customer preferences.
- Monitor ingredient stocks and place orders as necessary.
- Ensure cleanliness and maintenance of work areas, utensils, and equipment.
- Adhere to food safety and hygiene regulations at all times.
- Supervise and train junior pastry staff (if applicable).
- Collaborate with the Executive Chef and other kitchen staff to ensure smooth kitchen operations.
SECURITY, HEALTH AND SAFETY:
- Adheres to all health, sanitation and food safety rules and regulations
- Reports all potential and real hazards immediately
- Fully understands the hotel’s fire and emergency procedures
- Works in a safe manner that does not harm or injure self or others
- Keeps the highest standards of personal hygiene, dress, appropriate uniform, appearance, and conduct
MISCELLANEOUS:
- Attend meetings and trainings required by the Executive Chef
- Accepts flexible work schedule necessary for uninterrupted service to the food production function
- Maintains own working area, materials and company property clean, tidy and in good shape
- Helps Steward when needed for the effective running of the restaurant
- Continuously seeks to endeavour the knowledge of own job function
- Is well updated on, and possesses solid knowledge of the following:
– Hotel fire and emergency procedures
– Restaurant corporate marketing and promotional programmes - Responsible Business: show involvement and be interested in environmental and/or social issues by participating in Responsible Business hotel and departmental activities
REQUIREMENTS:
- Proven experience as a Pastry Chef, Baker, or relevant role.
- Certification in baking/pastry arts is preferred.
- Deep knowledge of baking techniques, ingredients, and food safety standards.
- Creativity and attention to detail.
- Time-management and organizational skills.
- Ability to work early mornings, weekends, and holidays as needed.

2.) Baker
POSITION: Baker
DEPARTMENT: Kitchen
REPORTS TO: Executive Chef

PRIMARY OBJECTIVE OF POSITION
The Baker is responsible for a variety of baked goods including bread, pastries, cookies, and other treats. The ideal candidate should be experienced in using bakery equipment, following recipes, and maintaining high standards of hygiene and presentation.
TASKS, DUTIES AND RESPONSIBILITIES
KEY RESPONSIBILITY:
- Prepare and bake a variety of bread, rolls, and other baked goods according to recipes or customer requirements.
- Measure and mix ingredients manually or using bakery equipment.
- Monitor baking process, adjust temperatures and timing as needed.
- Ensure consistency in taste, quality, and appearance.
- Maintain cleanliness of the baking area, equipment, and utensils.
- Follow all food safety, sanitation, and hygiene standards.
- Track inventory and report shortages or order ingredients as necessary.
- Collaborate with kitchen and pastry staff to meet production and presentation standards.
- Package and label baked goods for display or delivery.

- Knowledge of baking techniques and food safety regulations.
- Ability to work early mornings, weekends, and holidays.
- Physical stamina to work in a hot environment and stand for long periods.
- Attention to detail and good time management.
- Culinary certificate or training in baking is a plus.
